I hope you had a lovely Easter! We had a super low-key Easter breakfast at home with my parents and one of the new recipes I tried was so good, I had to share it with you all! Actually, I’ll share them all but we certainly had favorites.

I said low-key but I definitely had a moment when I wanted to do a full blown tablescape. It totally passed. I pulled out some random pink plates I’ve had for years just to add some Easter pink to the table and called it a day. It worked out because we were serving quiche and our favorite arugula salad so the pink plates were for the salad and not just to look pretty. I swear. #kindofalie

I had planned to do a veggie quiche and skip our usual breakfast casseroles because we’re kind of burned out on the casseroles. Our niece made a quiche a year or two ago for Easter and I’ve been needing to eat something just as amazing ever since.

I went through my Pinterest Breakfast Recipes to Try Board and decided to make two different quiches. A crustless one and a gluten free almond meal crust one. I also wanted to make baked french toast with bananas which turned into one of those and its strawberry and cream cheese sister recipe so I could use these beauties that we picked last weekend at our friend’s Fancy Farm(s)

Go here for the Strawberry Cream Cheese French Toast Casserole. I was worried that it might not be sweet enough since it didn’t have as much sugar and spice as other french toast casseroles so I went ahead and made a quick homemade strawberry puree as a backup.

The sister recipe to the Strawberry French Toast was this Bananas Foster French Toast Casserole. We didn’t have any rum extract or real rum so I just left it out knowing the kids would prefer that anyway. I considered adding nuts but Mr. FP talked me out of it because he isn’t a huge fan of dishes with nuts.

This recipe was really good. Definitely didn’t need any extra syrup for this one but also wasn’t as sickly sweet as some other french toast casseroles. The cream cheese helps with that, though. I think adding nuts would be totally fine for those who like them and I’m sure the rum extract would be super yummy if you have it. I forgot to pull out the whipped cream but that would have been a perfect topping!

Okay, moving on to the savory dishes…

The crustless Asparagus & Tomato Quiche was a fairly simple quiche, especially since you didn’t have to mess with buying or making a crust. This recipe called for parmesan or feta and I opted for parm. I think I might make it again with feta to see if that adds a little more flavor. It was a great, basic recipe and my only complaint was that I used a dish that made the quiche a little too thin. Not a giant issue but I’m a texture girl and the thinner quiche took away from the expected texture, if that makes sense. Next time, I’ll use a smaller dish or double the recipe.

Okay, drumroll, please…

I’ve never worked with almond meal before and had no clue what to expect here but OH MY STARS!!! This gluten free Arugula and Cremini Quiche with an Almond Meal Crust was the best quiche I’ve ever put in my mouth. This was one of those dishes where we were ready to fight over the last piece.

I knew when I was making it that it would blow my mind because there is garlic and fresh thyme IN THE CRUST!!! Smelled ah-mazing. It also didn’t hurt that we all super heart mushrooms (we all = adults).

Oh. And goat cheese. GOAT CHEESE, people!!! If we ran out of oxygen, I’m pretty sure I could breath goat cheese.

There was so much awesomeness going on in this flavorfest, I forgot to eat the strawberry french toast.

In case you’re wondering why I didn’t comment above on that recipe, that’s why. I was too busy stuffing goat cheese and thyme and mushrooms in my face. The other diners all said it was great but I do not speak of which I do not know.

So, here’s your takeaway. Gluten Free Arugula Cremini Quiche (AND GOAT CHEESE) with a Thyme, Garlic Almond Meal Crust!!!!! Make it. Now. Or next Easter, but now would be better.
